Third course was lime and wasabi scallop spoons. Again, super easy and delicious.
8 large scallops
1 tbs wasabi
1 tsp lime juice
Place scallops on paper towel and blot dry.
In a saucepan melt butter, add wasabi and lime and whisk well until combined. This mixture can separate however as long as mix it before serving it doesn’t really matter.
Place scallops on a searing hot pan and cook each side for about 30 seconds or until coloured and caramelised.
Place a spoonful of the wasabi butter into the spoons and place cooked scallop on top. Serve immediately.
