Bircher Muesli

Bircher muesli is one of my favourite ways to start the day, however, I never order it when eating out for breakfast. I am more of a savoury girl and the thought of missing some deliciously different and experimental savoury brekkie number is too much to bear. So it seems the perfect time to enjoy a Bircher Muesli is a Saturday morning at home.

This breakfast is quick and easy and fresh and cool, perfect for a lazy summers morning.

 

Serves 4

2 cups rolled oats
1 cup apple juice (I like pink lady apple juice)
1 grated granny smith apple
1/2 cup natural yogurt
1 cup fresh or frozen berries (raspberries, blueberries)
4 tbs honey
1/2 cup flaked or slivered almonds

Place oats in a bowl and cover with apple juice. Leave soaking for at least 3 hours or overnight.

Place berries in a saucepan and heat over medium heat until berries start to break down. Set aside to cool.

Toast almonds in a hot oven or under a medium grill. DON’T burn them… it can happen in an instant, keep watch. I burn them all the time… and nuts aren’t cheap!

Add grated apple and yogurt  to the oats and mix until well combined.

Serve with a spoon full of the berry compote, drizzle of honey and sprinkle with toast almonds.
