Toasted Honey Nut Granola

My normal morning routine is eggs. Scrambled, poached, fried, baked, omelette, French toast. Any way they come, they keep me full for most of the day and taste great.  However, sometimes, when I cant stomach another egg, I head to the pantry and whip up some muesli. I have never been into cereal or muesli and I have never really found a packet one that I like, but was surprised how good a homemade batch can be.

Using whatever I have at the time, the recipe varies, but I think this one is a pretty good mix. Oh, and my favourite tip, bung it all in the oven together. What that does to a raisin or sultana is magic, puffs up into a sweet, chewy little fruit surprise.

Serves 4

1 cup steel cut oats
1 cup quick oats
1/2 cup macadamia nuts
1/2 cup slivered almonds
2 tbs chia seeds
1/2 cup sultanas
2 tbs coconut oil
2 tbs honey

Place all dry ingredients in a bowl. Mix. Add the honey and the coconut oil, and with your hands, toss everything around until well coated and even.

Spread out on a lined baking sheet and bake at 160°C until golden brown. You may want to give the muesli a couple of shakes around to keep it evenly golden. I love my nuts super toasty so you may not want to take your muesli this far, but the beauty is, it’s up to you!
