Warm Kale and Shiitake Salad

As you may notice I have been making a few changes and enhancements to Eatin’ Mess and during my homework I noticed a gross injustice. This absolutely delicious warm kale salad had been sitting in another post and not given the glory it deserves.  So today, I am rectifying that. Here you go kale and shiitake salad, your very own post!

Serves 4 as a side

1 bunch of kale, chopped
1 cup of fresh shiitake mushrooms, sliced
2 gloves of garlic, minced
1 tbs ginger, minced
2 tbs sake
2 tsp sesame oil
1 tbs soy sauce
Oil for stir frying
Black and white sesame seeds

To make the salad, in a little oil, stir fry the garlic and ginger until golden, crispy and fragrant. Add sliced shiitake mushrooms and continue to fry until golden brown. You almost want everything a little toasted and nearly overdone so you get that nutty flavour from the garlic and the mushrooms. Once done, remove from the pan and set aside.

While still hot, deglaze the pan with sake, once the alcohol has cooked off, add chopped kale and toss in the liquid until it has started to wilt. Add the mushroom mix, soy and sesame oil. Continue to stir fry for a few more minutes. Then you are ready. Serve immediately with a sprinkle of sesame seeds.
