So, I mean, everyone is doing it. One Direction did, now T Swizzle is taking some time off. If it’s good enough for them, it’s a good enough excuse for my laziness too.
Anyway, I have been taking a break but I am back now, and since it’s April, and all your New Years Resolutions are well and truly out the window, I thought this burger would be the perfect recipe for you.
It is a pretty damn good burger. Enjoy.
Makes 4
Burger
4 brioche burger buns
400g minced beef
2 brown onions, thinly sliced
10 button mushrooms, thinly sliced
2 tbs butter
4 slices of smoked leg ham
4 slices of Swiss cheese
2 baby gem lettuce
Salt and pepper
Olive oil
Beer Mustard Cheese Sauce
1 tbs butter
1 tsp plain flour
1 tbs pale ale beer
3/4 cup of milk
1 cup grated American cheddar cheese

First put a tablespoon of olive oil and 1 tablespoon of butter in a pan. Add onions and cook on medium low until caramelised. Season and set aside.
In a large pan, add a tablespoon each of oil and butter and get hot. Add mushrooms tossing to coat in the butter. Once coated, try to make sure that all mushrooms are touching the pan, you may need to do this in batches, leave to golden and then turn and turn the pieces to brown the other side. Once done, season and set aside.
To make the cheese sauce, add your butter to a small pot over high heat, melt, add flour and whisking quickly, cook off the flour for about a minute or so. Add the beer, whisking quickly. Then start slowly adding the milk, whisking quickly and continuously until you have a smooth sauce. Add the cheese and mix until melted through. Season, then cover with lid and set aside.
For the meat, season your meat with salt and pepper and form into patties. Leave these out to get up to room temperature. Once up to temp, cook in a screaming hot skillet or pan, or on the BBQ. Once one side is cooked and turn, add the Swiss cheese on top to melt while the other side continues to cook. Once cooked let them rest for a minute or two while you toast the insides of your buns and gather your ingredients to assemble.
You can really assemble however you like, I find some people have different preferences about what goes on the bottom, I like the lettuce, ham, pattie with Swiss, cheese sauce, caramlised onions, mushrooms and then the bun top. It’s a really good burger!
