Parsley and Anchovy Salad

This salad is just delicious. It’s fresh and zesty and brings life to a casserole or paella. This can also be served any form of beef or other kind of rich hearty meat.

 

Gourmet Traveller: Spanish Braised Beef Cheeks
Serves 4

1/2 red onion finely sliced
1 bunch flat leaf parsley
2 anchovy fillets finely sliced
1/2 lemon juice and rind
1/4 cup olive oil

For salad, combine ingredients in a bowl and season to taste with freshly ground black pepper.
